beansideMonday already? Ew. Today is likely to be a boring day. my markets will likely come in late, so I'll have all day with nothing much to do. I'll probably work in the inbox some, but that never takes long, and I worked the project folder back to zero yesterday. I foresee another day on youtube.
Yesterday was a little slow, too. I finished my markets before lunch, even though Chicago sucks at the moment. Then, I did the teamwork folder, then I piddled in the inbox until it was time to go. Mostly, I chatted on Teams, to be honest.
Last night, I did make what Jess is calling their favorite dish I've ever made. It was a Tex-Mex chicken skillet. It involved cooking up the chicken, pulling it from the skillet and frying some onions and peppers. Then adding frozen corn and cooking until it was tender, Then I dumped in a can of tomatoes with mild green chilies some crushed tomatoes and black beans. A mishap with the pepper container later, we had a spicy chicken skillet. IT was actually pretty tasty, though a bit spicy for me, but when I cut it with rice and cheese, it was pretty good. It made enough for leftovers which made Jess very happy.
My sister was at a birthday party, so we did not get to do our normal early retreat downstairs to listen to Rusty Quill, so the most recent episode remains unlistened to. Dad went to bed early, after being hella sulky about the TV. It's like having a petulant teenager, I swear. Mind you, the man has an ipad, and several streaming services he could go forth and watch shit on. Including the Comcast app, which would let him watch his shows on demand. It's enough to drive a person crazy.
Okay, second cup of coffee has been achieved and sucked down. I guess that means it's time to get my morning started. Blah.
